Salsa Verde
This is super easy and super tasty. I don't think I know anybody that doesn't like Salsa Verde?
INGREDIENTS:
8 - 10 Tomatillos
1 Small Onion
4 Garlic Cloves
3 Chillies (Use Less If You Don't Like It Hot!)
Handful Fresh Cilantro
200ml Chicken Stock
Salt
METHOD:
1: So you want to blister all these ingredients which can be done by placing them under a grill (broiler) or placing the ingredients on a direct flame. If these are not options then simply roast in the oven for about 30 mins on about 180C/350F
2: Peel the garlic and onion with your hands and blitz everything except for the cilantro and stock in a food processor until fairly smooth (I like to still see the seeds)
3: Add the stock, (you choose how much for consistency) cilantro, blitz and then season to taste
OPTIONAL:
You can add avocado to it for a more creamy texture if you so wish. Also remember to only add the chillies according to your tolerance.....I like mine hot but if you don't then just the 1 single chilli will do.
