Aloo Gobi

GOBI = CAULIFLOWER and ALOO = POTATO. This is a gorgeous traditional Indian vegetarian dish that I've always been in love with. It's really rather simple and I'm gonna show you how to make it

 
 

INGREDIENTS:

1 Onion Finely Chopped

1 Cauliflower Roughly 2" Pieces

200g Potatoes Cubed

2 Tomatoes Diced

1 tbsp Minced Ginger

1 tbsp Minced Garlic

3 Mixed Chillies

1/2 tsp Turmeric

1 tsp Cumin

1 tsp Garam Masala

1 tsp Ground Coriander

1 tsp Chilli Powder

1 tsp Fennel Seeds

2 tsp Salt

METHOD:

1: Heat olive oil medium to high heat in medium size pot then fry off the fennel seeds. When they start to crackle add the onion, tomatoes, ginger, garlic and chillies then fry for about 5 mins

2: Mix spices together in a bowl with roughly 200ml water and add to the pot. Fry this off for about 5 mins then add the potato and cauliflower

3: Mix together to make sure everything is coated, reduce heat to low, season, cover and leave for about 20 mins stirring every so often before finally checking for seasoning

(Sprinkle with fresh coriander and finely chopped chilli to finish)
