Festive Plum BBQ Sauce

Well I think spiced plums are festive anyway! So here's a tasty little number for the condiment cupboard

INGREDIENTS:
350g Ketchup
150g Brown Sugar
100ml Apple Vinegar
1.5 tsp Smoked Paprika
1/2 tsp Garlic Powder
1/2 tsp Onion Powder
1/4 tsp Ground Cinnamon
1/4 tsp Allspice
1/4 tsp Ground Ginger
3 tsp Liquid Smoke
2 tsp Yellow Mustard
½ tsp Molasses
1 tsp Lea & Perrins
10g Salted Butter
400g Plums
1 tbsp Sugar
1: Roughly dice the plums, coat in the sugar and throw into a pot with about 100ml water on a low heat for about 15 mins. The aim is to cook them down to almost a jam
2: Meanwhile heat all other ingredients except the ketchup, mustard and butter together in a pot until combined
3: After a few mins add the ketchup and mustard and reduce to as low a heat as possible
4: Once the plums have completely cooked down to a jam like consistency pass them through a fine sieve to remove the skins into the bbq sauce mixture and finish with the butter
5: Allow to cool and transfer to bottles or jars
