Make brussels sprouts great again!

For years brussels sprouts have been given a bad rep, well to be fair if someone just boiled them to death and shoved them on my plate I think I would hate them too! Bacon and maple syrup is what I like and here's how I do it

INGREDIENTS:

1kg Sprouts

200g Chopped Bacon

Fresh Thyme

Maple Syrup

Cushed Walnuts

1: Cut the sprouts in half then simply blanch the sprouts in boiling water for about 5 mins and then strain

2: Meanwhile have a pan on medium heat and fry off the chopped bacon. You dont want it crispy just yet!

3: Add the sprouts and a few sprigs of fresh thyme to the bacon and toss through to coat in all those lovely juices and turn up the heat to medium high. Try to resist constantly moving the pan around as we are trying to create that lovely colour on the sprouts

4: After about 10 mins of this behaviour remove from the heat and drizzle in a little maple syrup then toss them to coat. At this point you can add the optional toasted walnuts.......I would ;)

You dont need to worry about seasoning this dish with salt as you are gonna get a lovely salty hit from the bacon and of course the wonderful sweetness from that maple syrup will have your friends and family screaming for sprouts all year round!
